I realize we may be past JAM season, but I have to share this recipe with you, because it's so GOOD and...because it would make such a nice hostess gift for Thanksgiving, all those spices!
My friend, Heather gave me a jar of this a while back. It looked a bit suspicious and actually sounded even MORE suspicious... Pineapple???? But, WOW! This is real 'foodie' yummy stuff. Best on a toasted slice of bread. Makes me want to plant a pear tree!
Spicy Pineapple Pear Jam
Ingredients
- 8 cups peeled finey chopped ripe pears (aobut 5 1/2 lb.)
- 4 cups white sugar
- 1 tsp ground Cinnamon
- 1 tsp Allspice
- 1 tsp ground Ginger
- 1/4 teaspoon ground cloves
- 1/2 tsp Nutmeg
- 1 tsp vanilla
- 8 oz can crushed pineapple
Directions
- Add all the ingredients to a dutch oven. ( I used our Le Creuset)
- Bring mixture to a boil and stir constantly.
- Lower the heat and simmer, stirring frequently, for 2 hours or until thickened.
- Skim off foam with a metal spoon.(I didn't get any foam)
- Pour immediately into hot sterilized jars, filling to about 1/4 inch from the top.
- Remove air bubbles and wipe jar rims.
- Cover quickly with metal lids and screw on bands~not too tightly to allow air to escape in water bath.
- Process in a boiling water bath for 10 minutes. (15 minutes at our altitude)
